Cooking rice for sushi: the right way!

The bad news: even for simple sushi variations, the sushi rice must be cooked first.

The good news : it's not as difficult as you probably think.

You will need these ingredients:

For 4 people

  • 250g sushi rice (from an Asian store or here on Amazon)

  • 500ml water

  • 1 teaspoon of salt

Optional :

  • 1 tablespoon Mirin

  • 2-3 tablespoons of rice vinegar

  • 2 tbsp . has sugar coffee

Tip for the right amount of rice: 100 g of sushi rice is already enough for 2 servings. It doesn't sound like much, but the rice swells and doubles in volume. But no matter how much rice you choose, the general rule is: always add twice as much water.

  1. Wash the sushi rice: place the sushi rice in a bowl and cover it with cold water. Wash" the rice with your hands. The water will now be whitish in color. Pour into a colander and wash the rice with fresh water. Repeat the process (about 3 times) until the water remains clear .

  2.  soak the sushi rice: put the clean rice in a saucepan with 500 ml of water. Leave to soak for 30 minutes.

  3. boil the vinegar syrup: During meanwhile, to give your sushi rice its typical sour taste, boil some mirin , rice vinegar and sugar in a saucepan until the sugar melts. Reserve the rice vinegar syrup and let it cool. Advice : This step is optional . Personally, I like the taste of the vinegar less and either reduce the amount of mixture or omit it.

  4. cook the sushi rice : add 1 teaspoon of salt to the soaked sushi rice and bring to a boil with the water in the pan. Reduce the heat and simmer the rice for 15 minutes with the lid on.

Cool the sushi rice: Remove the pan from the stove and allow the sushi rice to cool. Now you can also add the sugar and vinegar syrup while stirring .

Advice : to make the sushi rice cool faster, you can spread it flat on a baking sheet.

Turbo Tip: for quick sushi, cook the sushi rice the night before and refrigerate overnight. This makes it particularly easy to treat . You can also use the time it takes for the rice to puff up to wash and chop your vegetables for the sushi topping. Then just put everything together the next day.

1st sushi idea: Sushi burger

The sushi burger is the meeting point between Asia and America and you have almost no work, because it only takes 5 minutes to prepare it. Too good to be true ? Try it!

Trick : There easiest way to eat Sushi Burger is with a knife and fork. If you briefly fry the rice burgers in a pan before assembling them, they become a bit firmer and can also be eaten by hand in typical burger fashion.

You need these ingredients:

For 2 sushi burgers

  • 200 g ready-to-use sushi rice (cooked from 100g sushi rice)

  • 1 avocado (cut into slices)

  • 2 lettuce leaves (washed)

2nd sushi idea: the sushi burrito

Sushi burritos or " sashirritos " are the perfect on-the-go snack! Okay, okay, you have to roll the sushi for that, but at least you don't have to cut it, because you're eating the sushi burrito in one piece.

Advice : to keep your fingers clean, it's a good idea to wrap the homemade sushi burrito in parchment paper.

For four sushi burritos, you can use the same ingredients as above. Additionally, you will need two sheets of nori (from Asian store or supermarket) .

Here's how easy it is to prepare them:

As with classic maki rolls, spread a portion of sushi rice evenly (about 0.5cm thick) on a sheet of nori - but here, on the entire surface of the seaweed paper. Place the ingredients of your choice lengthwise in the middle. Then roll the sushi from bottom to top. Cut in half diagonally and wrap each end in parchment paper or aluminum foil.

Trick : sushi rice is easier to shape with wet hands and doesn't stick to fingers as much. Always have a bowl of lukewarm water handy. This also applies to the knife: to cut sushi, it should be as sharp as possible and slightly moistened.

3rd sushi idea: the sushi sandwich ( Onigirazu )

Colorful filled sushi sandwiches or " Onigirazu " are very trendy at the moment. What's great is that they are easy to make yourself and can be filled to taste.

Advice : THE onigirazu are also a popular snack during breaks in Japan. You can simply prepare the sushi sandwiches in the evening, put them in the fridge overnight, and pack them in your lunch box for you or your kids in the morning. If you are looking for Lunch Boxes for your children, don't hesitate and discover our collection!

For 8 onigirazu , you will also need 200-250 g ready-to-eat sushi rice (cook 110-150 g of rice) . For the filling , you can use red cabbage, cucumber, radish, mushrooms and tofu or fried pork. You will also need a total of 4 sheets of nori .

Here's how easy it is to prepare:

Lay out a sheet of nori in front of you. Spread a thin layer of sushi rice (0.5cm thick) between. Leave a space of about 2 cm from the edges of the seaweed paper. Now put a maximum of three layers of filling on top, because then you will cover the whole thing with another portion of rice.

Lightly moisten the edges of the sheet of nori and fold them towards the middle. Press firmly , refrigerate for 10 minutes and cut in the middle. Repeat the operation with the other three sheets of nori and you get eight delicious sushi sandwiches.
