The Philly Cheese Steak Sliders
Smoked Gouda Grilled Cheese with Arugula and Roasted Red Peppers
Ingredients

Eight 1/3 to 1/2 inch thick slices of Pullman bread

4 ounces smoked Gouda cheese, sliced very thinly using a cheese slicer

4 slices muenster cheese (about 4 ounces)

1 medium jar roasted red bell pepper, drained, dried and thinly sliced

2 cups of baby rocket

6 tablespoons unsalted butter, softened
Method

Lay out 4 slices of bread on a work surface. Top each with a layer of smoked Gouda, 1 slice of muenster, a thin layer of sliced red pepper (about 2 tablespoons), 1/2 cup of arugula and another layer of smoked Gouda. Close the sandwiches with the rest of the bread. Spread the butter on both sides of the bread, using about 1 1/2 tablespoons of butter for each sandwich.

Place 2 sandwiches in a medium nonstick skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly browned, about 2 minutes. Flip , re- cover , and cook until bread is golden brown and cheese is visibly melted, about 2 minutes longer. Repeat the operation with the other sandwiches.
Grilled Vegetable Quesadilla
Ingredients
Vegetables - Zucchini, yellow zucchini or your favorite squash, portobello mushroom, peppers, red onion.
Tortillas
Cheese - Fresh shredded mozzarella is the key to those drool-worthy cheese pulls.
Pesto - You can use store-bought pesto or make your own.
Seasoning - Salt and pepper to taste.
Recipe

Heat up the grill: Turn on your grill and let it heat up to about 300 to 350 degrees F.

Prepare the vegetables: Season the zucchini, squash and mushrooms with salt and pepper. Grill vegetables, including peppers on both sides, until grill marks form.

Remove them from the grill and set them aside. Be sure to grill the peppers until they are charred . Allow the peppers to cool then carefully remove the skin and seeds from the peppers and wash them.

Assemble the quesadillas: Take a large tortilla and spread 2 tablespoons pesto on top of the tortilla. Arrange the grilled vegetables on half the tortillas, some zucchini, squash, red onions, mushrooms and peppers. Top with about 1/2 cup mozzarella, use less if preferred. Flip the other half of the tortilla to form a semi-circle and press down.

Finish: Repeat with remaining tortillas and grilled vegetables. Cut each quesadilla in 4 and serve.
