Sausage Meatballs Recipe
It's no secret we love homemade meatballs! They are delicious, easy to prepare and always a hit with everyone! So yes, we do a lot! But that's especially true during the holiday season...when friends and family expect to see us all!
Last week I wanted to make a large batch of my easy meatballs, but realized at the last minute that I was out of lean ground beef. Oops ! But luckily I had sausage in the fridge and decided to make sausage meatballs. The result ? Not only were they so easy to make, but they were juicy, flavorful , and seriously delicious ! I tossed them with a classic marinara sauce and kept them warm in the slow cooker until the guests arrived! We served them with long rolls, cheese and a large salad. Oh, and wine! Lots of wine. But you can serve them with just about anything your little heart desires! Spaghetti squash is a great low calorie option!
Ingredients for Italian Sausage Meatballs
Ground sausage: You can either buy ground sausage in bulk or remove the sausage from the casings. You can use mild sausage, mild Italian sausage, or hot sausage. Or, use a combinationeggs: 2 large eggs will do
breadcrumbs: I prefer panko breadcrumbs , but any variety is fine
Parmesan cheese: the best is to grate it finely
Garlic: 2 cloves finely chopped or pressed in a garlic press
Water: Water is an essential ingredient in this recipe. So don't reduce it and don't be afraid ! It makes sausage balls moist, without adding calories. My grandmother has been using water in her meatballs for years. It's a little trick you'll love. Promise!
How to make sausage meatballs
Preheat the oven to 400 degrees (F). Line a large baking sheet with parchment paper and set aside. In a large bowl, add the sausage to the breadcrumbs, Parmesan and garlic. Slowly add the water, a few tablespoons at a time, mixing with your hands until well blended. Do not mix too much or the meatballs will be tough. The mixture should be very moist, but hold its shape when rolled into meatballs.
Using an ice cream scoop or large spoon, scoop about a tablespoon of meat into your palms and form a ball. Place the ball on the prepared baking sheet. Repeat the operation with all the meat. Place the pan in the oven and bake for 15 to 20 minutes , or until the meatballs are cooked through.
Pro tip: To easily and evenly shape your meatballs, use a spring-loaded cookie scoop !
Why Bake Meatballs?
Baked meatballs are a beautiful thing and so simple! Not only is it much cleaner than frying them, but it's also much easier than frying multiple batches in one pan. With my baking method, you can make all the meatballs in one go. Simply form 20 meatballs (roughly by size), place them on the baking sheet, and bake for 15 minutes . And that's all ! Once cooked, you can mix them with the sauce of your choice and serve them. We love them in classic marinara sauce or in spinach and basil pesto!
