Bailey's Irish Cream Chocolate Chip Cookies

Although I don't like drinking Bailey's Irish Cream (way too sweet for me), I love cooking with it!

And these Bailey's Irish Cream Chocolate Chip Cookie Bars are one of the best things to come out of my oven this month! They taste like my chocolate chip cookies...but so much easier!


In addition to the special ingredients listed above, you will need basic baking ingredients like flour, baking soda, eggs, vanilla extract, butter, and sugar (I use a combination of brown sugar and granulated sugar for the best flavor and texture !)

Of course, you will also need chocolate chips! I prefer to use dark chocolate, but semi-sweet chocolate, milk chocolate, or even white chocolate chips can work. And if you don't have any on hand, pieces of chocolate will do just fine! You can make your own by chopping up any chocolate bars you have on hand!

Can I omit the Irish cream?

Short answer: NO.

For what ? This recipe was developed to include it, and if you omit it, you will get worse than expected results.

But do n't worry ! Since I know not everyone drinks alcohol, I have an alternative for you. All you need to do is make my Easy Chocolate Chip Cookie Bars, but add a splash of cinnamon and espresso powder! They will be delicious and 100% alcohol-free .

How to make chocolate chip cookie bars?

Preparing these cookie bars couldn't be easier! And no electric mixer is needed!

All you need to do is add your melted butter to a large bowl and combine it with the two sugars. Be sure to beat everything until the mixture is light and fluffy . Next you will add the eggs and egg yolk, then the Baileys and vanilla. Finally, add the flour mixture and other dry ingredients, and stir until combined.


Scrape this mixture (it will be quite thick!) onto a baking sheet lined with parchment paper and bake for about 28 minutes ! Or until the bars are caught at the edges and just a little blurry in the middle. Then place the baking sheet on a wire rack to cool completely , or at least for 45 minutes. The longer you let them cool, the more uniform the bars will be when you slice them. But if you like super gooey cookie bars, cut them anytime!

I will definitely be making these at least once more this summer, mainly because they taste so good with vanilla ice cream on top!

They will easily enhance any cookie tray or gift basket! And the fact that they are so easy to make is a huge bonus! Honestly, anyone can do them and not be wrong! Even the most novice bakers! And everyone will think you're a cooking genius because the taste is perfect! Much better than any cookie bar bought from the bakery!

Baileys Irish Cream Chocolate Chip Cookie Bars

Ingredients ( 12 bars)

  • 1 cup (227 grams) unsalted butter, melted

  • 1 cup (213 grams) light brown sugar, firmly packed

  • 1/2 cup (99 grams) granulated sugar

  • 3 tablespoons (43 grams) Bailey's Irish Cream

  • 1 teaspoon vanilla extract

  • 2 large eggs plus an egg yolk, at room temperature

  • 269 ​​grams all-purpose flour (2 and 1/4 cups)

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon ground cinnamon

  • 1/4 tsp salt

  • 1 teaspoon espresso powder

  • 255 grams (1.5 cups) semi-sweet chocolate chips, plus extra for top, if desired.

  • Sea salt flakes, for sprinkling, optional.

Instructions

  1. Preheat the oven to 350 degrees (F). Line a 9 x 9 inch pan with parchment paper. Lightly spray the parchment paper and any exposed part of the pan with nonstick spray , then set aside.

  2. In a saucepan over medium heat, melt the butter.

  3. Remove from the heat and let cool for a few minutes, then place the butter in a large heatproof bowl.

  4. Add both sugars and mix until well combined. Stir in baileys and vanilla. Then add the egg and egg yolk, beating until combined.

  5. Using a rubber spatula, stir in the flour, baking soda, cinnamon, salt and espresso powder, mixing until combined.

  6. Finally, stir in the chocolate chips. Divide the batter into the prepared pan.

  7. Bake for 30 to 34 minutes, or until edges are firm and golden and center is slightly wonky.

  8. Let cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.
