The best Antipasto skewers (Italian skewer)

Antipasto skewers are the easiest finger food ever.

Full of flavor and so easy to make, they're perfect for bachelorette parties , parties, and more! Double or triple them to serve a crowd!


Well, let's get serious ! Today I'm sharing with you one of my favorite recipes that isn't actually a real recipe. If you're entertaining for the Super Bowl (or any event, really), this antipasto appetizer is here to help! They are incredibly easy to assemble and can be prepared up to 4 hours in advance.

Let's talk about adjustments!

These skewers are very adaptable . If you don't like mozzarella, you can replace it with cubes of cheddar, pepper jack or, well, you know! Don't like olives? Leave them aside. Don't like basil? Use young shoots instead. The options are endless. If you are serving a large crowd, feel free to double this recipe. If you feed a small crowd? Cut the recipe in half!

So many flavors and textures on one stick... No wonder people are devouring these babies!

PS Good luck not eating ALL of them before your guests arrive. It takes a lot of willpower!

Recipe

Ingredients ( 20 skewers)

  • 20 long wooden skewers

  • (1) 9-ounce package of cheese tortellini

  • 1/2 cup tangy Italian dressing

  • 1/2 teaspoon tabasco sauce (optional, but gives a nice kick)

  • 40 olives (I used Kalamata olives, but any kind of olive will do)

  • 40 grape tomatoes

  • 40 thin slices of Genoa salami

  • 20 small mozzarella balls

  • 40 pieces of basil, torn

  • 20 pieces of chopped artichoke hearts

Instructions

  1. Cook tortellini according to package directions; drain them and rinse them quickly with cold water. In large resealable plastic bag, toss tortellini with dressing and hot sauce, seal bag and turn several times to coat; refrigerate for at least 15 minutes and up to 4 hours.

  2. When ready to assemble, drain and discard remaining marinade.

  3. For each skewer, I threaded an olive, a tomato, basil, tortellini, basil, a slice of folded salami, a ball of mozzarella, tortellini, basil, a piece of folded salami, a heart of artichoke, a tomato, an olive. You can change the layout if you want, but I find this order to be visually appealing and delicious.

Ratings; Double the recipe if necessary. The recipe can also be cut in half.

I find this recipe delicious and even when I don't have a guest I love preparing skewers to take away in my lunch box to eat at work or for a picnic.
