I love classic brownies like everyone else! So most of the time, when the mood takes me, I pull out my recipe for the best chocolate brownies and put myself in the oven. But some days...I need something more decadent !


Something with a little crunch. And a little kick. And a little bourbon ! Basically, something that makes the ?? th day of quarantine a little more bearable and exciting!

And that, my friend, is where these Bourbon Pecan Brownies come in! As you know, I love the combination of bourbon and pecans. It's a perfect marriage of flavors ! In the past, I've shared with you Chocolate Bourbon Pecan Cookies and Bourbon Pecan Blondies...and now we have a brownie version! And it is certainly the most decadent version to date!

These Bourbon Pecan Brownies will blow your mind! They're thick, incredibly chewy, and filled with crunchy pecans, a sprinkle of cinnamon, and flavorful bourbon! The ultimate brownie recipe for special occasions! Can I omit the bourbon?

Short answer: no . This recipe was specifically designed to include bourbon and is for bourbon lovers! But I fully understand that not everyone consumes alcohol. Don't worry, I have plenty of brownie recipes for you too! I suggest you bake my brownies in the oven and add a sprinkle of cinnamon and some toasted pecans. Believe me, you won't regret it!

As far as the type of bourbon to use, it's up to you! We love Bulleit bourbon , so that's what we chose!

Cocoa powder AND chocolate

Unlike many brownie recipes that use chocolate or cocoa powder, this recipe uses both! This makes for an incredibly decadent base that explodes with the rich flavor of chocolate fudge! . I strongly advise you to use cocoa powder if you can. It will give you that midnight dark chocolate color and flavor!
For melted chocolate, I suggest using a quality brand of chocolate that you know and trust. I used an 80% Excellence bar, but you can use a slightly less intense dark chocolate. But I advise you not to go below 60% cocoa. The brownies would then be too sweet! I also advise against using chocolate chips for the melted chocolate. They don't melt smoothly and can cause your brownie batter to stick.

Tips and Tricks

  • To ensure even baking, you will bake these brownies at 160 (C). Which is slightly lower than the traditional temperature of 180 degrees that most recipes call for. And because you're using a lower temperature, you'll cook them a little longer. About 34 minutes. But never forget that the cooking times are only estimates! Every oven works a little differently, and your brownies may be ready minutes earlier or later.

  • Use the right baking pan! I suggest you use a reflective metal mold, like this one. If you are using a glass or ceramic pan, you will need to increase the baking time by about 10 minutes.

  • Don't overmix your batter! This is what causes cake-like brownies. And nobody wants that! Pro Tip: Stop mixing when you still see the tiniest trace of dry ingredients. Then add your chocolate chips. You should only need 3 or 4 mixes to incorporate these last ingredients. It is better not to mix enough than to mix too much!

  • Bake your brownies on the middle rack. I often get asked about this, so I want to make it clear that unless otherwise specified, I always suggest baking brownies on the middle rack.

  • And perhaps most importantly, make sure you don't overbake your brownies! They should still have a little jiggle in the center, and a few wet crumbs should pop out when a toothpick is inserted.

  • Place your brownies on a cooling rack and let them cool completely in the pan! You'll be amazed at how much they firm up as they cool.



Recipe

Ingredients

  • 1 cup (120 grams) all-purpose flour

  • 1/2 cup (43 grams) unsweetened cocoa powder

  • 1/8 teaspoon ground cinnamon (optional)

  • 1/2 teaspoon of salt

  • 3.5 ounces dark chocolate, finely chopped

  • 3/4 cup (170g) unsalted butter

  • 2 tablespoons (25 grams) oil

  • 1 teaspoon vanilla extract

  • 43 grams of bourbon (3 tablespoons)

  • 1 cup (198g) granulated sugar

  • 1/2 cup (106 g) dark brown sugar, packed

  • 2 large eggs, at room temperature

  • 1/2 cup (57 g) toasted pecans, coarsely chopped

  • 3/4 cup (128 g) semi-sweet chocolate chips

  • 1/4 teaspoon flaked sea salt, optional

Instructions

  1. Preheat the oven to 325 degrees (F). Line a 9 x 9 inch metal pan with parchment paper, overlapping two sides slightly. Spray with nonstick spray and set aside.

  2. In a medium bowl, whisk together flour, cocoa powder, cinnamon (if using) and salt.

  3. In a large microwave-safe bowl, combine the chocolate, butter and oil. Microwave on low power in 15 second increments, stirring between each, until mixture is HOT and butter and chocolate are completely melted. Mix with a whisk to obtain a homogeneous mixture.

  4. Stir in vanilla and bourbon, then both sugars, beating until well combined.

  5. Add the eggs, one at a time, beating well after each addition.

  6. Add dry ingredients, stirring just enough to combine.

  7. Using a rubber spatula, gently fold in the pecans and chocolate chips.

  8. Pour the batter into the prepared pan and smooth the top. Sprinkle a few more pecans on top of the dough, if desired.

  9. Bake for 34 to 36 minutes, or until edges are set and top is shiny and slightly cracked.

  10. Place the pan on a cooling rack and let cool completely, about 2 hours, before slicing.

  11. Sprinkle with sea salt, if needed, just before serving.

For oil, you can use canola oil, vegetable oil or melted coconut.
If you want to add chocolate chips on top, press them onto the baked brownies right out of the oven.
