Happy Monday! How was your week-end ? How was your Easter ? We enjoyed a few lazy days, with carrot cake for breakfast, an epic parks and recreation marathon, and way too many mimosas! I really need a day of green juice and green toast detox ... but first, just one last bite of these brown buttery M&M blondies...

Appreciated by children and adults, this blondie recipe is always unanimous! These blondis are wildly delicious and super simple ! To prepare them you will need butter, sugar, eggs and egg yolks, flour, salt and M&M's. M&M's or baked M&M's work great! And I also like to add chocolate chips! But it's completely optional! Probably the most complicated ingredient is brown butter ...but don't skip it! Because it gives those blondies epic flavor! And I have all the details on how to make brown butter below!

How to make brown butter
Brown butter is so delicious and easy to make on your stovetop. All you need is a stick of butter, a pan, and some patience . The transformation of melted butter into browned butter is done by toasting the milk solids in the butter so that the liquid takes on a dark, rich, nutty brown color. This adds a delicate nutty flavor to the blondie batter which really takes the flavor of these blondies to a whole new level of deliciousness.
To make brown butter, simply put a stick of unsalted butter in a cold saucepan and melt the butter over medium heat, stirring periodically to make sure it doesn't burn. The simmering butter will begin to foam slightly , then turn a nutty brown color. When it's evenly browned, simply remove it from the heat. Be sure to pay particular attention to the end of the browning process to avoid burning the butter.

Cooking time
Once your dough is assembled, you need to scrape it into a 23x33cm pan and press it evenly into the pan. As the dough is very thick, the easiest way is to place a piece of Saran Wrap on the blondie dough and press it down with your hands. Then put it in the oven for about 30 minutes ! I usually take mine out after 24 minutes...but a lot of people like theirs more "well done", so if that's your case, cook them a few minutes longer. But remember that blondies will continue to bake and firm up even after you take them out of the oven!

1 cup (227 grams) unsalted butter, melted until browned.

1 and 1/2 cups (319 grams) light brown sugar, firmly packed

1/4 cup (50g) granulated sugar

1 tablespoon of vanilla extract

2 large eggs plus 2 egg yolks, at room temperature

245 grams all-purpose flour (2 cups)

1/4 tsp salt

1 and 1/4 cups (210 grams) M&M candies

1/2 cup (85 g) semi-sweet chocolate chips

Flaky sea salt, for sprinkling, optional
Instructions

Preheat the oven to 190 degrees (C). Line a 23x33 inch pan with parchment paper. Put it aside.

In a saucepan over medium heat, melt the butter. Continue cooking, swirling the pan occasionally, until browned.

Remove from the heat and let cool for a few minutes, then scrape the butter into a large heatproof bowl.

Add both sugars and mix until well combined. Stir in the vanilla. Then add the eggs and egg yolks, beating until combined.

Using a rubber spatula, stir in the flour and salt, mixing until combined. Finally, stir in the M&Ms and chocolate chips. Divide the batter into the prepared pan.

Bake for 26 to 30 minutes, or until edges are firm and golden and center is slightly wonky.

Let cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.
