Until now, it was not among the favorite keto pasta of the French, mainly because of its texture which could be a little off-putting. WHAT ARE SHIRATAKI NOODLES?

Shirataki noodles, also known as konjac noodles or miracle noodles , are low-calorie or even zero-calorie noodles made from the root of the konjac plant. They have been consumed in Japan for over a thousand years! Although they have little taste on their own, they absorb the flavors of the sauce used, similar to traditional pasta.

These miracle noodles are made from glucomannan fiber, a gelatinous fiber found in the root of the konjac yam. However, some variations are also made from tofu. You will undoubtedly prefer konjac noodles to tofu ones.

Here's how to prepare shirataki noodles in a simple and effective way:

In general, depending on the brand of noodles you choose, you have to rinse them. If you do not prepare them correctly, they may have a chewy or slightly crunchy texture.

When prepared correctly, they will have a texture very similar to al dente pasta (you can also try this method with shirataki rice noodles). Try it and see for yourself!

  1. To prepare shirataki noodles, start by rinsing them. Place the noodles in a colander and run them under cold water. This rinsing helps to neutralize their flavor.
  2. In a large saucepan, bring the water to a boil. Then add the noodles and let them boil.
  3. After cooking, drain the noodles again by placing them in the colander. Rinse them thoroughly under running water, then be sure to dry them thoroughly using paper towels.
  4. Preheat a large skillet over medium-high heat. Add noodles ( without adding oil) and sauté until well dried. Remove them from the pan and cover them.

Reheating or freezing?

You can prepare your shirataki noodles in advance and store them in the refrigerator. They reheat very well.

Reheating: To reheat, use the microwave or a hot skillet until hot and ready to eat.

Freezing: It is not recommended to freeze your shirataki noodles. Due to their high liquid content, they do not thaw properly after freezing.
