Chai Spice Apple Crisp
Do you like apple crisps? Then you have to try this Chai Spice Apple Crisp!
The apples are coated in warm spices like cardamom , allspice, cinnamon, cloves and ginger! And the buttery oatmeal topping is sweet, crispy, and just begging to be topped with a big scoop of vanilla ice cream! It's the fall dessert par excellence , if you ask me!

Autumn is in the air! And here in the Hudson Valley, that means apples! Heaps and heaps of apples! Our farmers market sells every variety imaginable...and most weeks we buy over 5kg ! Yes, pounds. I pack them in lunches, slice them, and serve them with wine and cheese, but my favorite thing to do with them? Bake them.
Currently, my favorite apple recipe is apple crisp! And since it's the time of year that makes me crave all things warm and cozy ...I decided to add some soothing chai spices to the mix. The two spices that shine the brightest are cinnamon and ginger! The spicier spices are subtle and complement the brown sugar base. If you're a fan of chai, or just looking to spice up your baking life, I highly suggest trying this fun fall twist on the classic crisp!
What are chai spices?
Chai spices are not the same as chai tea. But the flavors are very similar! As for the chai spice mix, I have found that the exact spices used vary from recipe to recipe. But my favorite combination is this:

Cardamom

Allspice

Cinnamon

Cloves

Ginger
-
Nutmeg

and black pepper

Apple Crisp Ingredients
Apples :
You will need 10 cups, or about 10 medium sized apples. My favorite apples for baking are Jonagold , Granny Smith , Honeycrisp , Braeburn , or Pink Lady . You'll peel and core the apples, then cut them into about 1/4″ slices. Don't cut them too thin!
Lemon juice :
A simple squeeze prevents the apples from browning and helps the spices coat the apples more evenly.
All purpose flour :
A small amount will thicken the filling. No apple soup here!
Granulated sugar and brown sugar:

Chai spices:

Unsalted butter:
You will want to cut the butter into cubes. Make sure your butter is at room temperature! Melted butter will not work .
Old fashioned oats:
Alias rolled oats. Instant oats don't work!
How to make an apple crisp
Unlike many traditional baking recipes that call for you to preheat your oven to 180 degrees, for this apple crisp recipe, we're going to preheat the oven to 190 degrees (C) . In a large bowl, combine apples and lemon juice. In a medium bowl, combine the sugars, flour and spices. Sprinkle this mixture over the apples and toss well to coat . Pour the apple mixture into a 23x33cm baking dish and set aside while you prepare the crumble topping. Mix oats, sugars, spices and flour. Add the butter and cut it into the dry ingredients until the mixture resembles coarse flour. Sprinkle the crumble topping evenly over the apples. Then place the pan in the oven and bake for 45 to 50 minutes , or until the top is golden brown and the apples are bubbly .
Serve hot ! Preferably with a huge scoop of vanilla ice cream.

Ingredients
For the Chai Spiced Apple Filling:

10 cups apples (about 10 medium-sized apples), peeled and cut into 1/4" slices.

2 teaspoons of fresh lemon juice

2 tablespoons all-purpose flour

1/2 cup granulated sugar1 spoon
-
1/2 teaspoon ground cinnamon
-
1 teaspoon ground ginger
-
1/2 teaspoon nutmeg
-
1/4 teaspoon cloves
-
1/4 teaspoon allspice
-
1/4 teaspoon ground cardamom
-
1/8 teaspoon ground black pepper
For the oatmeal chai crisp topping:

8 ounces unsalted butter, at room temperature, cut into cubes.

1 and 1/2 cup old fashioned oats
-
3/4 cup granulated sugar
-
3/4 cup light brown sugar, firmly packed
-
3/4 tsp. ground cinnamon
-
1/2 tsp. ground ginger
-
1/4 teaspoon ground cloves
-
1/4 teaspoon allspice
-
1/4 teaspoon ground cardamom
-
1/8 teaspoon ground black pepper 1 cup all-purpose flour
Instructions
For the Chai Spiced Apple Filling:

Preheat the oven to 190 degrees (C).

Lightly grease a 23 x 33cm baking dish.

Place the sliced apples in a large bowl and toss them with the lemon juice. In a medium bowl, combine flour, sugar and spices.

Sprinkle this mixture over the apples and toss well to coat.

Pour the apple mixture into the prepared baking dish and set aside while you prepare the breadcrumb topping.
For the Crispy Oatmeal Chai Topping:

In a large bowl, combine the oats, the two sugars, the spices and the flour. Add the cubed butter and, using two forks or a pastry blender, stir the butter into the dry ingredients until the mixture resembles coarse flour.

Sprinkle topping evenly over apples.

Place the pan in the oven and bake for 45-50 minutes, or until the top is golden brown and the apples are bubbly.

Remove from the oven and place the pan on a cooling rack.

Serve hot! Preferably with ice cream.
