Chicken Wings Baked with Honey and Sriracha

Every year I try to challenge myself in the kitchen by cooking at least one thing a month that takes me completely out of my comfort zone. For the record, cookies are my comfort zone... muffins and scones are my safe spot... chewy blondies and rich chocolate brownies are as safe as a fluffy blanket, and pasta plates are always a flashing neon sign "HAPPY"...

So what makes me anxious behind the counter? The meat . Not all meat; I can cook a juicy hamburger or a Sicilian braciole without breaking a sweat. It is especially the meat that needs to be prepared. You know... butchering, to put it delicately. It makes me cringe and makes me want to run very very fast in the other direction. I'm such a wimp.

My favorite starter when we go to a restaurant is hands down the sweet and spicy, sticky, saucy chicken wings. It's a real treat because I never make them at home. Or rather, until last week, I never made it at home. It was the chicken wings challenge! And while there were a few tears and a lot of swearing, I have to say that just one bite of these sweet and spicy sriracha baked chicken wings was worth it. Redemption is sweet.

How to prepare Honey Sriracha Chicken Wings?

These Honey Sriracha Chicken Wings are baked, not fried, so you'll need a very large baking sheet and oven for this adventure.
The raw wings will be carefully blotted with paper towels (this helps to remove excess moisture) before being tossed with the spices and oil. I used sesame oil here because I like the subtle Asian flavor it imparts to the overall taste. You can find sesame oil in ethnic markets and most major grocery stores; it is usually found in the ethnic cuisine department.

How long should you cook chicken wings at 400 degrees?

The wings cook for about 50 minutes , but maybe a little less depending on how your oven works! I know it may seem like forever, but it's worth it! I promise you. And meanwhile, you can prepare your sweet and spicy sriracha sauce.




I love this sweet and spicy sriracha sauce because it's made with sriracha, honey, butter, and spices! You'll cook this combination of delicious ingredients on the stovetop, then brush the cooked wings with it. Then you'll turn up the broil on your oven and cook the wings for another 4-5 minutes. This final step is very important for the crispiness! This is because the grill seals the sauce in the wings and creates that crispy skin we all know and love.

These wings are spicy, crispy and tasty on the outside. But tender, meaty and succulent inside. This recipe makes 1.3 kg, which is enough to serve hungry friends. But if you plan to feed a large crowd, I encourage you to multiply this recipe as needed. Because they fly away from the set! I made these wings for a bunch of boys last weekend and all I can say is they were a huge hit !

Recipe summary

Ingredients

  • 1.3 kg of chicken wings

  • 3 tablespoons unsalted butter, melted

  • 2 tablespoons sesame oil

  • 2 1/2 teaspoons garlic powder

  • 1 teaspoon kosher salt

  • 3/4 teaspoon freshly ground black pepper

  • 1/4 teaspoon cayenne pepper

For the sauce:

  • 4 tablespoons unsalted butter

  • 1/2 teaspoon crushed red pepper flakes

  • 1 teaspoon fresh ginger, finely grated

  • 1/3 cup of honey

  • 1/3 cup Sriracha sauce

  • 1 tablespoon of soy sauce

  • 1 tablespoon fresh lime juice

  • 1 tablespoon rice wine vinegar

  • 1 teaspoon cornstarch

  • 2 teaspoons sesame seeds, for garnish

  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 400 degrees (F). Line a large rimmed baking sheet with parchment paper; put it aside. Dry the chicken wings thoroughly with paper towels, pressing down firmly to remove as much moisture as possible.

  2. Place chicken wings in large bowl; put aside. In a small bowl, combine the melted butter, sesame oil, garlic powder, salt, pepper and cayenne. Pour this mixture over the wings and, using your hands, toss well to coat them. Spread the wings in a single layer on the prepared baking sheet.

  3. Cook the wings until golden brown and crispy; 50-55 minutes, using tongues to flip halfway through.

  4. Meanwhile, prepare the sauce.

For the sauce:

  1. Melt the butter in a small saucepan over medium heat. Once melted, add the crushed red pepper and ginger; cook for a minute, then add the honey, Sriracha, soy sauce, lime juice and vinegar. Bring the mixture to a boil, stirring constantly, then stir in the cornstarch; cook until thickened, about 30 seconds. Remove from heat and set aside.

  2. When the wings are done cooking, carefully remove the pan from the oven and set it aside. Increase oven temperature to broil setting. Carefully remove the wings from the baking sheet and transfer them to a large heatproof bowl. Pour the hot sauce over the wings and toss gently to coat. Drain the excess oil from the baking sheet, then return the wings to the prepared sheet and place the sheet in the oven for 4-5 minutes. Stay near your oven during this time; the grill acts quickly. Carefully remove the wings from the oven and transfer them to a large serving platter. Sprinkle wings with sesame seeds, cilantro and honey (if desired); serve with lime wedges and plenty of napkins.
